Ingredients

  • 1 16-lb turkey, thawed
  • 2 Sticks- Kerry gold herb butter at room temperature
  • 1 jar organic turkey rub
  • 2 teaspoons salt
  • 1-2 large onions, quartered
  • 1 bunch green onions largely chopped
  • 2-sprigs rosemary stems removed

Directions

Preheat the oven to 375º.

In a small bowl, stir together the softened butter and poultry seasoning until combined; Set aside.

Slide your hand in between the skin and the meat on the breast of the turkey, loosening the skin all over.  I start the drumstick it is easier to pull up the skin without tearing it. Take the herb butter and spread it all over in between the skin and the meat, and on top of the turkey, rubbing it in all over and using every last bit of it. Place the Turkey rub inside the skin and out side the bird after buttering.

Sprinkle the salt all over the turkey and inside the cavity. Place the onions inside the turkey cavity.

Place the turkey in the preheated 375º oven for 20-30 minutes, until nice and golden brown all over.

Cook for 2 hours then check the internal temperature . (using a meat thermometer in the deepest part of the breast, not touching bone!) until it reaches 165º.

Carve and serve with all the trimmings!!
